Homemade French Baguettes by Riccardo Arnoult from L’Amour du pain Bakery
Ingredients
- 4 cups (1 litre) unbleached all-purpose flour (500 g)
- 2 1/3 cups (575 ml) warm water
- 1 teaspoon (5 ml) instant yeast (4 g)
- 2/3 cup (150 ml) warm water
- 4 cups (1 litre) unbleached all-purpose flour (500 g)
- 2 1/2 teaspoons (12.5 ml) salt
- 1 teaspoon (5 ml) instant yeast (4 g)
Instructions
- In a large bowl, whisk together all the ingredients until the poolish is smooth. Cover the bowl with a damp cloth and let rise in a warm place for about 2 hours or until it has doubled in volume.
