Bean and Turmeric One-Pot-Meal Soup
Ingredients
- 1 onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, thinly sliced
- 1 garlic clove, chopped
- 1/4 cup (50 g) pearl barley
- 1/2 tsp curry powder
- 1/2 tsp ground turmeric
- 3 tbsp (45 ml) olive oil
- 6 cups (1.5 litre) chicken broth
- 1 can (19 oz/540 ml) mixed beans, rinsed and drained
- 1 can (14 oz/398 ml) diced tomatoes, drained
- 1 small sweet potato, diced
Instructions
- In a large pot over medium-high heat, soften the onion, carrots, celery and garlic with the barley and spices in the oil. Season with salt and pepper. Add the broth and bring to a boil. Cover and simmer for 30 minutes.
- Add the beans, tomatoes and potato. Bring back to a boil. Cover and cook for 10 minutes or until the barley is tender. Adjust the seasoning.
- Serve with naan or pita bread.
