Pavlovas with Passion Fruit Crémeux, Pineapple, Coconut and Basil
In this pavlova recipe, the little meringue nest is garnished with fruit full of sunshine, coconut and basil whipped cream, for a surprising and delicious blend of flavours.
Ingredients
- 1/2 cup (125 ml) 35% whipping cream
- 1/4 cup (10 g) basil leaves, finely chopped
- 1 1/2 tsp cornstarch
- 1 1/2 tsp (7.5 ml) lime juice
- 3 egg whites, at room temperature
- 3/4 cup (160 g) sugar
- 1/4 cup (55 g) sugar
- 3 egg yolks
- 1/3 cup (75 ml) passion fruit juice (see note)
- 2 tbsp unsalted butter
- 1/2 cup (125 ml) mascarpone cheese
- 2 tbsp sugar
- 1/2 cup (95 g) pineapple, cut into small dice
- 1 lime, zest finely grated
- Toasted coconut shavings, for decoration
- Small basil leaves, for decoration
Instructions
- In a bowl, combine the cream and basil. Cover and let infuse in the refrigerator for 8 hours or overnight.
