Pomelo and Spicy Crab Salad
Ingredients
- 3/4 lb (350 g) cooked shrimp, shelled and deveined
- 3/4 lb (350 g) fresh or frozen snow crab meat
- 1 cucumber, peeled, seeded and diced
- 1 carrot, cut into julienne
- 1 pomelo cut into skinless segments, halved
- 2 tablespoons (30 ml) pomelo juice
- 2 tablespoons (30 ml) fresh cilantro, chopped
- 2 tablespoons (30 ml) mayonnaise
- 1/2 jalapeño pepper, seeded and finely chopped
- 1/2 teaspoon (2.5 ml) paprika
- 1/4 cup (60 ml) roasted peanuts, crushed
- Salt and pepper
Instructions
- Cut the shrimp in half horizontally. Set aside.
- In a large bowl, combine the shrimp, crab, cucumber, carrot, pomelo, pomelo juice, cilantro, jalapeño, and paprika. Add the mayonnaise and stir to combine. Season with salt and pepper.
- Sprinkle with the peanuts and serve. Better at room temperature.
