Minestrone Soup with Tomato Juice

The whole family will love this easy-to-make soup. Its secret? Using tomato juice rather than canned tomatoes. It still brings a rich tomato flavour to the dish without the acidity that you get from the canned stuff. This recipe is great for quick weekend lunches.

Ingredients

  • 4 cloves garlic, sliced
  • 2 tablespoons (30 ml) olive oil
  • 2 onions, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cups (750 ml) tomato juice
  • 3 cups (750 ml) chicken broth (approximately)
  • 1/2 cup (125 ml) small pasta
  • 2 zucchini, diced
  • 1 can (540 ml/19 oz) red kidney beans, rinsed and drained
  • 1 yellow bell pepper, cored and diced
  • 1 cup (250 ml) fresh green peas
  • Salt and pepper

Instructions

  1. In a large saucepan or a Dutch oven over medium heat, cook the garlic in the oil until it begins to colour. Add the onions, carrots and celery. Season with salt and pepper and cook for about 3 minutes. Add the tomato juice and chicken broth. Bring to a simmer, cover and cook until the vegetables are tender, about 15 minutes. Stir in the pasta and cook for about 5 minutes. Add the remaining ingredients and simmer uncovered for 3 or 4 minutes. Add broth as needed. Adjust the seasoning.
