Clean-out-the-Fridge Soup
Ingredients
- 1 onion, finely chopped
- 2 celery stalks, chopped
- 1 zucchini, chopped
- 1 carrot, chopped
- 1 large or 2 small potatoes, peeled and chopped
- 1 tbsp (15 ml) olive oil
- 6 cups (1.5 litres) chicken broth
- 3 cups (210 g) broccoli florets
- 1/2 cup (125 ml) thinly sliced almonds, roasted
Instructions
- In a pot over medium heat, soften the vegetables, except for the broccoli, in the oil for 10 minutes. Add the broth. Bring to a boil and simmer over low heat for 20 minutes. Add the broccoli and cook for 5 to 7 minutes or until the vegetables are tender.
- In a blender, purée the soup until smooth. Season with salt and pepper. Ladle into bowls and garnish with the sliced almonds.
