Sparkling Lime-Raspberry Lemonade
You’ll be easily charmed by this mocktail made with lime and raspberry cordial infused with ginger, black pepper and juniper berries. Once the syrup is ready, simply pour some in a glass and add lemon sparkling water. A homemade lemonade, in collaboration with Eska, that has a refreshing je-ne-sais-quoi that suits every occasion.
Ingredients
- 1 cup (210 g) sugar
- 1 1/4 cups (170 g) fresh raspberries
- 1/2 cup (125 ml) water
- 1 lime, zest grated
- 1/2 cup (125 ml) lime juice
- 1/4 cup (60 ml) lemon juice
- 1 tbsp fresh ginger, coarsely chopped
- 1 tsp juniper berries, coarsely crushed
- 1/2 tsp black peppercorns
- 1 large ice cube
- 1/2 cup (125 ml) lime-raspberry syrup, cold
- 1/2 cup (125 ml) lemon sparkling water, cold
- 4 fresh raspberries, for decorating
- 1 slice lime
Instructions
- In a small pot, bring all of the ingredients to a boil. Simmer for 5 minutes.
- Strain the syrup through a sieve placed over a bowl, pressing on the raspberries with the back of a ladle to extract as much syrup as possible. Compost the raspberry seeds and aromatics. Cover and refrigerate the syrup until completely chilled, about 1 hour. The syrup will keep for 1 month in an airtight container in the refrigerator (see note).
