Tuna Melt

Ingredients

  • 1 can (3 1/2 oz/99 g) oil-packed solid tuna, drained
  • 1 tbsp (15 ml) mayonnaise, plus more for spreading
  • 1 tbsp sour gherkins, cut into small dice, plus more for serving
  • 1 tbsp dill, finely chopped
  • 1 tsp (5 ml) whole-grain mustard
  • 1/2 tsp (2.5 ml) sambal oelek
  • 3 slices Monterey Jack cheese
  • 2 slices sandwich bread

Instructions

  1. Preheat a mini electric sandwich maker for 5 minutes.
  2. Meanwhile, in a bowl, combine the tuna, mayonnaise, gherkins, dill, mustard and sambal oelek. Season with salt and pepper.
  3. On a work surface, place half of the cheese on 1 slice of bread. Cover the cheese with the tuna mixture and top with the remaining cheese. Close the sandwich. Generously cover the outside of the sandwich with mayonnaise.
  4. Place the sandwich in the sandwich maker. Close the machine and cook for 6 minutes or until the bread is nicely browned. Cut the sandwich in half. Serve with small gherkins, if desired. Serve immediately.
