Fried Onion Rings (The Best)
Ingredients
- Vegetable oil, for frying
- 2 Vidalia onions, peeled
- 1 cup (150 g) unbleached all-purpose flour
- 1/3 cup (55 g) white or brown rice flour
- 1/2 tsp salt
- 1/2 tsp sweet paprika
- 1/4 tsp cayenne pepper
- 1 cup (150 g) unbleached all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp sweet paprika
- 1/4 tsp cayenne pepper
- 1 cup (250 ml) light pale ale, cold
- 2 tbsp (30 ml) ice water
Instructions
- Preheat the oil in a deep fryer to 365°F (185°C). Line a baking sheet with a wire rack or paper towel. Preheat the oven to 200°F (95°C).
- On a work surface, cut the onions into rounds ½ inch (1 cm) thick. Separate into rings. Set aside. Keep the smaller pieces for another use.
