Potage Crécy (French Carrot Soup)
Ingredients
- 1 onion, chopped
- 2 garlic cloves, chopped
- 2 tbsp butter
- 4 cups (520 g) carrots, peeled and cut into rounds
- 1 large potato, peeled and cut into large dice
- 5 cups (1.25 litres) vegetable or chicken broth (see note)
- 2 slices white or whole wheat bread, diced
- 2 tbsp butter
- Parsley leaves, to taste
Instructions
- In a large pot over medium-high heat, soften the onion and garlic in the butter. Add the carrots and cook for another 2 minutes. Add the potato and broth. Bring to a boil. Cover and simmer for 20 minutes or until the vegetables are tender.
- In a blender, purée the soup until smooth. Season with salt and pepper.
