Red Velvet Cookies
Ingredients
- 4 oz (115 g) cream cheese, softened
- 2 tbsp sugar
- 2 cups (300 g) unbleached all-purpose flour
- 2 tbsp cocoa powder, sifted
- ½ tsp baking soda
- 1/8 tsp salt
- 1 cup (225 g) unsalted butter, softened
- 1 cup (210 g) brown sugar
- ¼ cup (55 g) sugar
- 1 tsp (5 ml) vanilla
- 1 tsp (5 ml) red gel-based food colouring
- 2 eggs
- 8 oz (225 g) white chocolate, coarsely chopped
Instructions
- Line a plate with parchment paper.
- In a bowl, combine the cream cheese with the sugar until the sugar has dissolved. Shape into 20 balls using about 1 ½ tsp of the mixture for each one. Place spaced out on the plate and slightly flatten each ball. Freeze for 30 minutes or until completely frozen.
