  • 4 eggs, at room temperature (see note)

  1. In a pot of simmering water, gently lower the eggs using a slotted spoon. Cook for 6 to 7 minutes.
  2. Drain the eggs and fill the pot with cold water. Return the eggs to the pot and let cool for 5 minutes.
  3. Peel the eggs under cold running water and pat dry. Compost the shells. On a work surface, cut the eggs in half.

To perfectly cook soft-boiled eggs, gently place them in a pot of simmering water. Cook for 6 or 7 minutes before removing them and placing them in a bowl of cold water. The yolk should be thick but still slightly runny. Add them to a ramen noodle dish or on a poutine.
