Asparagus and Ham Gnocchi
Ingredients
- 2 packages (350 g each) fresh or vacuum-sealed gnocchi
- 2 tbsp butter
- ½ lb (225 g) asparagus, trimmed and cut into 1 ½-inch (4 cm) pieces
- 1 carrot, cut into small dice
- 1 ½ cups (375 ml) low-sodium chicken broth
- ½ lb (225 g) white ham, diced
- 3 tbsp dill, coarsely chopped, plus more for serving
Instructions
- In a large skillet over medium heat, brown the gnocchi in the butter for 6 minutes, stirring occasionally. Add the vegetables and cook for 2 more minutes.
- Add the broth and bring to a boil. Simmer until the vegetables and gnocchi are tender. Add the ham and dill. Season with pepper and mix well. Add more broth as needed.
- Serve the gnocchi in shallow bowls. Sprinkle with more dill, if desired. Serve immediately.
