  • 1 cup (30 g) curly parsley leaves
  • 1 tbsp dill fronds
  • 1 green onion, cut in chunks
  • 1 garlic clove, halved
  • ½ Fresno or jalapeño pepper, seeded and halved
  • 1/3 cup (75 ml) olive oil
  • 1 ½ lb (675 g) cod fillets, cut into 4 pieces
  • ½ cup (40 g) panko breadcrumbs
  • Lemon wedges, for serving

  1. With the rack in the middle position, preheat the oven to 450°F (230°C).
  2. In the bowl of a hand blender, finely chop the herbs, green onion, garlic and chili pepper with ¼ cup (60 ml) of the oil. Season generously with salt and some pepper. Transfer the mixture into an 11 x 8-inch (28 x 20 cm) baking dish. Coat the cod in the herb mixture and spread the pieces out in the dish.
  3. In a bowl, combine the breadcrumbs with the remaining oil. Divide among the pieces of cod, pressing down to adhere.
  4. Bake for 12 minutes or until the fish is cooked and the breadcrumbs are golden. Serve with lemon wedges and a green salad, if desired.
