Orange and White Chocolate Cream Mini Doughnuts

- 4 oz (115 g) white chocolate, chopped
- 1 cup (250 ml) 35% whipping cream
- ¾ cup (115 g) unbleached all-purpose flour
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 egg
- ⅓ cup (70 g) sugar
- 1 orange, zest finely grated
- 2 tbsp (30 ml) canola oil
- ½ cup (125 ml) buttermilk (see note)
- 1 tbsp pistachios, chopped
- 1 tbsp dried rose buds, leaves separated

- Place the chocolate in a bowl.
- In a small pot, bring the cream to a boil. Pour the hot cream over the chocolate and let sit for 1 minute without stirring. Whisk until smooth. Cover with plastic wrap directly on the surface of the cream. Refrigerate for 2 hours or until completely chilled.
