Date and Cashew Energy Balls
Ingredients
- ¾ cup (100 g) unsalted roasted cashews
- 1 ½ cups (270 g) pitted dates, halved
- ½ cup (15 g) puffed rice cereal
- ¼ cup (35 g) hemp seeds
Instructions
- In a food processor, blend the cashews until reduced to a fine powder. Add the dates and blend until the mixture starts to come together. Add the cereal and pulse a few seconds until slightly crushed.
- With your hands, form into balls using 1 tbsp of the mixture for each one.
- Place the hemp seeds in a shallow dish. Roll each ball in the hemp seeds, pressing to coat well. The energy balls will keep for 1 week in an airtight container at room temperature.
