Reduced-Sugar Maple Pudding Cake (Pouding Chômeur)
Ingredients
- 4 ripe pears, peeled, seeded and chopped
- 1 ½ cups (375 ml) water
- ½ cup (125 ml) maple syrup
- 1 tbsp cornstarch
- 1 cup (150 g) unbleached all-purpose flour
- 1 ½ tsp baking powder
- 1 pinch salt
- ¼ cup (55 g) unsalted butter, softened
- 1/3 cup (70 g) sugar
- 1 egg
- 1/3 cup (75 ml) milk
- ½ tsp (2.5 ml) vanilla
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C).
- In a blender, purée all of the ingredients until smooth. Transfer to a pot. Bring to a boil while whisking constantly. Pour into a 10-cup (2.5 litre) soufflé dish. Set aside.
