Reduced-Sugar Maple Pudding Cake (Pouding Chômeur)

Ingredients

  • 4 ripe pears, peeled, seeded and chopped
  • 1 ½ cups (375 ml) water
  • ½ cup (125 ml) maple syrup
  • 1 tbsp cornstarch
  • 1 cup (150 g) unbleached all-purpose flour
  • 1 ½ tsp baking powder
  • 1 pinch salt
  • ¼ cup (55 g) unsalted butter, softened
  • 1/3 cup (70 g) sugar
  • 1 egg
  • 1/3 cup (75 ml) milk
  • ½ tsp (2.5 ml) vanilla

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C).
  2. In a blender, purée all of the ingredients until smooth. Transfer to a pot. Bring to a boil while whisking constantly. Pour into a 10-cup (2.5 litre) soufflé dish. Set aside.
