Ethné de Vienne’s Caribbean Spice Mix
Ingredients
- 2 tsp coriander seeds
- 1 tsp dried thyme
- ½ tsp black peppercorns
- ¼ tsp ground turmeric
- ¼ tsp ground cassia or cinnamon
- 10 allspice berries
- 1 bay leaf
- Ground habanero chili pepper to taste
- A pinch of nutmeg or mace
Instructions
- In a mortar and pestle, personal blender or coffee grinder, crush the spices.
- The spice mix will keep for 2 years in an airtight container at room temperature.
