Agrikol’s Haitian Marinade
Ingredients
- 3 garlic cloves, peeled and halved
- 1 red bell pepper, seeded and cubed
- 1 Scotch bonnet or habanero chili pepper, halved and seeded
- ½ leek, coarsely chopped
- ½ cup (20 g) flat-leaf parsley leaves and stems, coarsely chopped
- ½ cup (20 g) cilantro leaves and stems, coarsely chopped
- 1/3 cup (75 ml) vegetable oil
- 1 tsp salt
- ½ tsp ground black pepper
Instructions
- In a food processor, coarsely chop the garlic, bell pepper, chili pepper, leek and herbs. Add the oil, salt and pepper. Blend until the mixture emulsifies.
- Use the remaining marinade for sticky rice or as a marinade for other meat and fish dishes. The marinade will keep for 1 week in an airtight container in the refrigerator or it can be frozen.
