Fig and Goat Cheese Bites with Pistachios and Honey

Ingredients

  • 2 tbsp shelled pistachios
  • 6 fresh figs
  • 1/2 cup (85 g) unripened goat cheese, at room temperature (see note)
  • Fleur de sel, to taste
  • Honey, for drizzling

Instructions

  1. Place the pistachios on a plate and roast in the microwave for 2 minutes. Let cool.
  2. On a work surface, halve the figs lengthwise.
  3. Using a mortar and pestle, finely crush the pistachios. Sprinkle with fleur de sel, to taste, and combine well.
  4. Place a dollop of goat cheese onto each fig half. Arrange on a serving platter. Sprinkle with the crushed pistachios and drizzle with honey.

To fully honour the miraculous fruits, we turned them into bite-sized appetizers that transported us to the Mediterranean.
