Who said brunch needs bubbles? Frothy, smooth and smacking of citrus, his New Orleans-inspired cocktail is impossible to just sip.

- 3 oz (90 ml) gin
- 3 tbsp (40 g) sugar
- 1 ½ oz (45 ml) 35% heavy cream
- 1 oz (30 ml) lemon juice
- ½ oz (15 ml) lime juice
- ¼ tsp (1 ml) orange blossom water
- 1 egg white
- 1 ½ cups (220 g) ice cubes
- 4 oz (125 ml) cold club soda
- Small zests of lime
- Pinch of cinnamon

- In a cocktail shaker, combine the gin, sugar, cream, lemon and lime juice, orange blossom water, egg white and ice cubes. Shake vigorously for 2 to 3 minutes or until the cocktail has a thick froth.
- Pour into 2 glasses, filtering out the ice cubes. Top off with the club soda and garnish with lime zest and cinnamon.
