Honey Sticky Buns

Ingredients

  • 1 1/4 cups (310 ml) buttermilk, warm
  • 1/4 cup (60 ml) honey
  • 2 1/2 tsp (12.5 ml) instant dry yeast
  • 1/2 tsp (2.5 ml) salt
  • 4 1/2 cups (630 g) unbleached all-purpose flour
  • 2 eggs
  • 1/2 cup (115 g) unsalted butter, softened
  • 1/2 cup (125 ml) creamed honey
  • 2 tbsp (30 ml) unsalted butter, softened
  • 2 tsp (10 ml) ground cinnamon
  • 2 tbsp (30 ml) buttermilk
  • 1/4 cup (60 ml) creamed honey, softened
  • 1/4 cup (33 g) icing sugar

Instructions

  1. In a bowl, combine the buttermilk, honey, yeast and salt.
  2. With a wooden spoon or in a stand mixer (using the dough hook attachment), combine the flour, eggs and the buttermilk mixture until the dough starts to form.
  3. Add the butter and knead the dough for about 5 minutes with the stand mixer or by hand on a floured work surface. The dough will be soft and slightly sticky. Transfer the dough to a clean, lightly oiled bowl. Cover with a clean, slightly damp cloth. Let rise in a warm, humid place for 1 hour.
