Grilled Miso Salmon with Roasted Peanuts and Ginger
Ingredients
- 1 lime, washed
- 1 shallot, chopped
- 2 garlic cloves, chopped
- 1 tbsp fresh ginger, chopped
- 3 tbsp (45 ml) olive oil
- 3 tbsp roasted unsalted peanuts, chopped
- 2 tbsp (30 ml) honey
- ½ tsp (2.5 ml) sambal oelek
- 1 ½ lb (675 g) salmon fillet with skin
- 1 tbsp (15 ml) miso
- 1 tbsp (15 ml) honey
- 2 tbsp (30 ml) olive oil
- 1 broccoli, including the stem peeled and quartered, steamed
Instructions
- Finely grate the lime zest and place in a bowl. Using a knife, cut away the white pith and membrane from the lime to reveal the flesh. Finely chop the flesh and add to the bowl of zest.
- In a small pot over medium-high heat, brown the shallot, garlic and ginger in the oil. Add the peanuts and honey. Cook for 1 minute. Pour into the bowl of lime. Add the sambal oelek. Set aside at room temperature.
