Homemade Seitan

This DIY seitan is the perfect vegan recipe for when you’re looking for a meat substitute.

Ingredients

  • 2 cups (240 g) vital wheat gluten flour, plus more for dusting
  • ½ cup (30 g) nutritional yeast flakes
  • 1 ¼ cups (310 ml) boiling water
  • ¼ cup (60 ml) low-sodium soy sauce

Instructions

  1. In a large bowl, combine the gluten flour with the nutritional yeast. Add the boiling water and soy sauce. Mix well with a spatula until the dough forms into a sticky ball.
  2. On a surface dusted with gluten flour, knead the dough for 3 minutes. If the dough is too sticky, add more gluten flour as needed. Shape into a loaf. Cover in plastic wrap, leaving a ½-inch (1.5 cm) space at each end to allow the loaf some space to expand. Twist the ends of the plastic wrap, as you would a candy wrapper, and tie in a knot to seal.
  3. Place the seitan loaf in a pot of simmering water. Cover and poach for 40 minutes, turning the loaf over halfway through. Remove from the water and let cool. Refrigerate for 4 hours or until completely chilled.
