Waffles with Cinnamon Applesauce

Ingredients

  • 1 tbsp cornstarch
  • 1 cup (250 ml) apple juice
  • 3 tbsp butter
  • 3 McIntosh apples, peeled, cored and sliced
  • 3 Cortland apples, peeled, cored and sliced
  • 1/4 cup (55 g) sugar
  • 1 tsp ground cinnamon
  • 2 cups (240 g) pastry flour
  • 2 tsp baking powder
  • 1/4 cup (55 g) sugar
  • 1 1/4 cups (310 ml) milk
  • 1 tsp (5 ml) vanilla extract
  • 3 eggs, separated
  • 1/4 cup (55 g) unsalted butter, melted and cooled

Instructions

  1. In a small bowl, dissolve the cornstarch in the apple juice.
  2. In a pot over high heat, melt the butter. Add the apples and cook for 2 minutes. Add the sugar and cinnamon. Cook over medium heat for 10 minutes. Add the cornstarch and apple juice mixture and bring to a boil, stirring constantly. Remove from the heat and set aside.
