Vegan Strawberry Scones

Scones and butter seem to be inseparable. And yet, we’ve managed to create a vegan recipe that uses no dairy products and that’s just as scrumptious as the original recipe. Our secret ingredients? An oat beverage and coconut oil. Thanks to them, you’ll get crumbly, golden scones just as you like them.

Ingredients

  • 3/4 cup (180 ml) unsweetened oat beverage (see note), plus more for brushing
  • 2 tsp (10 ml) lemon juice
  • 2 cups (300 g) unbleached all-purpose flour
  • 1/2 cup (105 g) sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup (115 g) virgin coconut oil (see note)
  • 1 cup (140 g) fresh strawberries, cut into small wedges
  • 1/2 cup (65 g) icing sugar
  • 1 lemon, zest finely grated
  • 1 tbsp (15 ml) lemon juice

Instructions

  1. With the rack in the top third, preheat the oven to 400°F (200°C). Line a baking sheet with a silicone mat or parchment paper.
  2. In a bowl, combine the oat beverage and lemon juice. Let sit for 5 minutes.
  3. In a food processor or in a large bowl with a pastry cutter, combine the flour, sugar, baking powder, baking soda and salt. Add the coconut oil and blend until the mixture has a sandy texture.
  4. Add the oat beverage mixture and combine just until the dry ingredients are moistened. Do not overwork the dough.
  5. On a floured work surface, form the dough into a 12-inch (30 cm) square using your fingers or a rolling pin. Cover with the strawberries. Loosely roll the dough up into a long log. Gently press the dough into a rectangle about 1 ¼ inch (3.5 cm) thick. Cut the dough into 5 rectangles. Cut each rectangle in half to form two triangles. Place the scones on the baking sheet, evenly spacing them out. Freeze at this point, if desired (see note). Brush the scones with more oat beverage.
  6. Bake for 18 to 20 minutes or until the scones are golden. Let cool on a wire rack.
