Udon Noodles with Tofu and Green Beans
Ingredients
- 1/2 cup (125 ml) water
- 1/4 cup (60 ml) ketchup
- 1/4 cup (60 ml) low-sodium soy sauce
- 2 tbsp (30 ml) peanut butter
- 1 tbsp brown sugar
- 1 tsp (5 ml) sambal oelek, or more to taste
- 1 lb (450 g) firm tofu, crumbled
- 3 tbsp (45 ml) vegetable oil
- 2 garlic cloves, finely chopped
- 1 tbsp fresh ginger, finely chopped
- 1/2 lb (225 g) green beans, trimmed
- packages (200 g each) fresh udon noodles
- 2 green onions, thinly sliced
- 1/4 cup (40 g) roasted peanuts, coarsely chopped (optional)
Instructions
- In a bowl, whisk together all of the ingredients. Season with pepper. Set aside.
