Udon Noodles with Spicy Beef and Tamari
Ingredients
- ½ English cucumber, thinly sliced on a mandoline
- 1 small red onion, thinly sliced
- 2 tbsp (30 ml) rice vinegar
- 2 tsp (10 ml) maple syrup
- 1 lb (450 g) lean ground beef
- 1 red onion, thinly sliced
- 1 tbsp (15 ml) vegetable oil
- 1 tsp ground coriander
- ½ tsp red pepper flakes
- ½ tsp ground black pepper
- ½ tsp ground Sichuan peppercorns (optional)
- 4 packages (200 g each) fresh udon noodles
- 1/3 cup (75 ml) tamari
- 3 tbsp (45 ml) maple syrup
- 1 tbsp roasted sesame seeds
Instructions
- In a bowl, combine all of the ingredients. Let marinate for 10 minutes. Drain.
