Tuna, Caramelized Onion and Kale Pasta
This pasta dish will be very successful on weeknights. The creamy pasta is garnished with canned tuna and kale, as well as caramelized onions to add a delightful sweet flavour. Add it to your collection of recipes to make regularly.
Ingredients
- 4 onions, thinly sliced
- 2 garlic cloves, chopped
- 3 tbsp butter
- 2 cans (7 oz/198 g each) oil-packed tuna, drained
- 2 tbsp (30 ml) whole-grain mustard
- 1/4 cup (60 ml) dry white wine (optional)
- 3/4 cup (180 ml) 15% cooking cream or 35% cream
- 1/2 tsp dried tarragon
- 1/4 tsp red pepper flakes
- 1 lb (450 g) bucatini or spaghetti
- 6 cups (180 g) kale, stems removed, leaves chopped
Instructions
- In a pot over medium-high heat, cook the onions and garlic in the butter for 15 minutes or until nicely browned, stirring often. Season with salt and pepper. Add the tuna and mustard. Stir to break up the tuna. Deglaze with the wine. Add the cream, tarragon and red pepper flakes. Mix well.
- Meanwhile, in a large pot of salted boiling water, cook the pasta until al dente. Set aside 1 ½ cups (375 ml) of the cooking water. Drain the pasta.
- Add the kale to the pot of sauce and stir until just wilted. Add the pasta and stir well to coat with the sauce. Add the reserved pasta cooking water to thin out the sauce as needed. Adjust the seasoning.
- Divide the pasta among four shallow bowls. Serve immediately.
