Top Sirloin Steaks with Peas and Sweet Potato

Ingredients

  • 1 garlic clove, chopped
  • 1 tbsp butter
  • 1 ½ cups (375 ml) beef broth
  • 1 tbsp (15 ml) tomato paste
  • 2 tsp (10 ml) Worcestershire sauce
  • 1 large sweet potato, peeled and diced
  • 1 ½ cups (225 g) frozen green peas, thawed
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • ½ tsp brown sugar
  • ½ tsp salt
  • 4 beef top sirloin steaks, 6 oz (170 g) each
  • 2 tbsp butter
  • Sour cream, for serving (optional)

Instructions

  1. In a large non-stick skillet over medium heat, lightly brown the garlic in the butter. Add the broth, tomato paste, Worcestershire sauce and sweet potato. Bring to a boil. Simmer for 8 minutes or until the potato is tender, stirring occasionally.
