Tofu and Cashew Stir-Fry
Ingredients
- 1/4 cup (60 ml) chili sauce
- 2 tablespoons (30 ml) soy sauce
- 2 tablespoons (30 ml) mirin
- 1/2 teaspoon (2.5 ml) sambal oelek
- 1/2 teaspoon (2.5 ml) cornstarch
- 1 block 1 lb (454 g) firm tofu, cut into 1-cm (4-cm) thick and 1/2-inch (4-cm) long sticks, patted dry
- 1/3 cup (75 ml) cornstarch
- 1/2 cup (125 ml) peanut or olive oil
- 4 green onions, chopped
- 1 teaspoon (5 ml) chopped fresh ginger
- 2 cloves garlic, finely chopped
- 1 cup (250 ml) unsalted cashews, toasted
- 1/4 cup (60 ml) chopped fresh cilantro (optional)
- Salt and pepper
Instructions
- In a bowl, combine all the ingredients. Set aside.
