Sweet and Sour Pork Chops with Peas, Cucumber and Mango
Ingredients
- ¼ cup (60 ml) chicken broth
- 3 tbsp (45 ml) ketchup
- 2 tbsp (30 ml) tamari or soy sauce (see note)
- 1 tsp (5 ml) maple syrup
- ½ tsp ground ginger
- ¼ tsp garlic powder
- 4 boneless pork chops, about ¾ inch (2 cm) thick each
- 1 tbsp (15 ml) olive oil
- 1 ½ cups (225 g) small green peas
- 1 English cucumber, cut into thick spirals or julienned
- 1 small ripe mango, peeled and thinly sliced
- 1 tbsp cilantro or mint leaves, finely chopped
