Stuffed Turkey with Caramelized Red Onions
Ingredients
- 1 turkey, about 16 lb (7 kg)
- 32 cups (8 litres) cold water
- 1 cup (210 g) brown sugar
- 3/4 cup (180 g) salt
- 2 tsp ground cinnamon
- 1 tsp black peppercorns, crushed
- 1 lb (450 g) ground pork
- 1/4 lb (115 g) bacon, chopped
- 2 apples, peeled and grated
- 1 cup (125 g) dried breadcrumbs
- 1 tsp ground cinnamon
- 1 1/2 cups (375 ml) unsweetened applesauce
- 1/2 cup (115 g) butter, softened
- A piece of cheesecloth, 4 layers thick, cut the same size as the turkey breast and moistened with water
- 2 carrots, peeled and cut into large pieces
- 4 celery stalks, cut into large pieces
- 2 cups (500 ml) chicken broth
- 6 large red onions, peeled and cut in half crosswise so the rings are showing
- 1/2 cup (125 ml) balsamic vinegar
Instructions
- Place the turkey in a 15-quart (15 litre) pail or stainless steel pot. Keep chilled.
