Stuffed Chicken and Apple Juice Stew
Ingredients
- 3/4 lb (375g) ground veal
- 1/2 cup (125 ml) dry breadcrumbs
- 1 onion, chopped
- 3 cloves garlic, finely chopped
- 1 egg, lightly beaten
- 1 tablespoons (15 ml) chopped fresh tarragon
- Salt and pepper
- 1 chicken, about 3 1/2 lbs (1.8 kg)
- 8 cups (2 litres) fresh apple juice
- 4 cups (1 litre) water
- 6 medium carrots, peeled
- 1 small rutabaga, peeled and cut into 8 wedges
- 1 celery root, peeled and cut into 8 wedges
- 1 large leek, cut into 8 sections
- 1/2 Savoy cabbage, cut into 8 pieces
- 1 clove
- 1 bay leaf
- Salt and pepper
Instructions
- In a bowl, combine all the ingredients. Season with salt and pepper. Set aside.
