Spicy Pork Skewers and Arugula Salad
Ingredients
- 1 pork tenderloin
- 18 medium wooden skewers, soaked in water 30 minutes
- 1 tablespoon (15 ml) brown sugar
- 1 teaspoon (5 ml) paprika
- 1/2 teaspoon (2.5 ml) chili powder
- 1/2 teaspoon (2.5 ml) dry mustard
- 1/4 teaspoon (1 ml) ground cumin
- 1/4 teaspoon (1 ml) salt
- 1/4 teaspoon (1 ml) ground black pepper
- 1/4 teaspoon (1 ml) garlic powder
- 1/4 cup (60 ml) cider or white wine vinegar
- 2 tablespoons (30 ml) apricot jam
- 1 teaspoon (5 ml) Dijon mustard
- 1 clove garlic, finely chopped
- 6 cups (1.5 litres) arugula
- Salt and pepper
Instructions
- Cut the pork tenderloin in half crosswise. Cut each piece in half horizontally. Cut each piece lengthwise in ½-cm (¼-inch) thick piece. Set aside.
