Spicy Pork Skewers and Arugula Salad

Ingredients

  • 1 pork tenderloin
  • 18 medium wooden skewers, soaked in water 30 minutes
  • 1 tablespoon (15 ml) brown sugar
  • 1 teaspoon (5 ml) paprika
  • 1/2 teaspoon (2.5 ml) chili powder
  • 1/2 teaspoon (2.5 ml) dry mustard
  • 1/4 teaspoon (1 ml) ground cumin
  • 1/4 teaspoon (1 ml) salt
  • 1/4 teaspoon (1 ml) ground black pepper
  • 1/4 teaspoon (1 ml) garlic powder
  • 1/4 cup (60 ml) cider or white wine vinegar
  • 2 tablespoons (30 ml) apricot jam
  • 1 teaspoon (5 ml) Dijon mustard
  • 1 clove garlic, finely chopped
  • 6 cups (1.5 litres) arugula
  • Salt and pepper

Instructions

  1. Cut the pork tenderloin in half crosswise. Cut each piece in half horizontally. Cut each piece lengthwise in ½-cm (¼-inch) thick piece. Set aside.
