Spiced Nut-Stuffed Turkey Roast
Ingredients
- 1/2 cup (125 ml) butter, softened
- 1/2 teaspoon (2.5 ml) dry mustard
- 1/4 teaspoon (1 ml) ground coriander
- 1/4 teaspoon (1 ml) ground five-spice
- 1/4 teaspoon (1 ml) ground cumin
- 1/4 teaspoon (1 ml) ground nutmeg
- 1/4 cup (60 ml) golden raisins
- 1/4 cup (60 ml) dried cranberries
- 1/2 cup (125 ml) chicken broth
- 2 tablespoons (30 ml) brandy
- 1 onion, finely chopped
- 1 stalk celery, diced
- 1 clove garlic, finely chopped
- 2 tablespoons (30 ml) olive oil
- 3/4 cup (180 ml) mixed nuts, roasted and crushed
- 2 cups (500 ml) diced stale bread
- 1/2 cup (125 ml) applesauce
- 2 eggs, lightly beaten
- Salt and pepper
- 1 turkey breast roast, about 4 lbs (1.8 kg) with or without the skin and without the tenders, untied (two breast halves)
- 2 tablespoons (30 ml) olive oil
- 2 1/2 cups (675 ml) chicken broth
- 2 tablespoons (30 ml) flour

- In a bowl, combine all the ingredients. Set aside.
