Soba Noodle Salad with Air Fryer Flap Steak
Forget macaroni and mayonnaise for this soba noodle salad. It also includes a good quantity of kale and Savoy cabbage as well as zucchini and cucumber, mixed with hot sauce and maple syrup. A few slices of grilled flank steak and Asian pear bring this super-satisfying dish together.
Ingredients
- 1 tbsp (15 ml) vegetable oil
- 1 garlic clove, chopped
- 1 beef flap steak (bavette), about 3/4 lb (340 g)
- 2 cups (170 g) Savoy cabbage, thinly sliced
- 3 cups (90 g) kale, stems removed, leaves coarsely chopped
- 1 small zucchini, cut into halfmoons on an angle
- 1 English cucumber, thinly sliced into rounds on a mandoline
- 6 tbsp (90 ml) rice vinegar
- 2 tbsp (30 ml) maple syrup
- 1 tsp (5 ml) hot sauce (Sriracha-style)
- 1 package (200 g) soba noodles
- 2 tbsp (30 ml) low-sodium soy sauce
- 1 tbsp (15 ml) toasted sesame oil
- 1 Asian pear, halved, cored and thinly sliced on a mandoline
Instructions
- In a bowl, combine the oil and garlic. Season with salt and pepper. Add the meat and toss well to coat. Place the meat in the basket of an air fryer. Cook for 12 minutes at 400°F (200°C). Transfer the meat to a plate and let rest for 10 minutes (see note). On a work surface, thinly slice the meat against the grain.
