Snow Crab Rolls
Ingredients
- 1 egg yolk
- 1 tbsp (15 ml) lemon juice
- 1 tsp (5 ml) Dijon mustard
- 1/2 cup (125 ml) canola oil
- 1 lb (450 g) snow crab meat, drained (preferably fresh)
- 3/4 cup (120 g) English cucumber, peeled, seeded and diced small
- 2 green onions, finely chopped
- Tabasco-style sauce, to taste
- 6 hot dog buns
- 6 Boston lettuce leaves
- Softened butter, for spreading
Instructions
- In a bowl, whisk together the egg yolk, lemon juice and mustard. Add the oil in a thin stream while whisking vigorously. Season with salt and pepper. Refrigerate as needed.
