Shrimp and Grits
Ingredients
- 3 cups (750 ml) milk
- 1 can (10 oz/284 ml) condensed chicken broth
- 1 cup (180 g) cornmeal grits (see note)
- 2 cups (200 g) sharp cheddar cheese, grated
- 1 onion, chopped
- 2 bell peppers, various colours, seeded and diced
- 2 tbsp butter
- 2 tbsp toasted flour
- 2 tsp Cajun spice mix
- 1 can (10 oz/284 ml) condensed chicken broth
- 1 cup (140 g) cherry tomatoes, halved
- 1 lb (450 g) medium shrimp (41-50), shelled and deveined
- 2 green onions, chopped
- ¼ cup (10 g) cilantro, finely chopped
Instructions
- In a pot, bring the milk and broth to a boil. While whisking, sprinkle in the cornmeal. Cover and simmer for 30 minutes over low heat, stirring frequently. Add the cheese and stir just until melted. Add more water, as needed, for a silky texture. Season with salt and pepper. Keep warm.
