Salmon with Egg Sauce
Ingredients
- 1/2 cup (125 ml) 35% cream
- 3 egg yolks
- 3 tablespoons (45 ml) butter
- 3 tablespoons (45 ml) flour
- 2 cups (500 ml) chicken broth
- 4 hard-cooked eggs, coarsely chopped
- Salt and pepper
- 4 salmon fillets, about 6 oz (170 g) each
- 2 tablespoons (30 ml) olive oil
- 2 tablespoons (30 ml) lemon juice
- 1 tablespoon (15 ml) chopped fresh chives
Instructions
- With the rack in the middle position, preheat the broiler. Brush a large baking sheet with oil.
