Ingredients

  • 1/4 cup (55 g) brown sugar
  • 1/4 cup (60 ml) low-sodium soy sauce
  • 60 cup (60 ml) mirin
  • 2 tbsp (30 ml) rice vinegar
  • 1/2 tsp (2.5 ml) sambal oelek
  • 2 garlic cloves, chopped
  • 1 shallot, thinly sliced
  • 4 thick pieces salmon with skin, each about 6 oz (170 g)
  • 1 tbsp (15 ml) olive oil
  • 1 tbsp sesame seeds

Instructions

  1. Place the cast iron pan in the pizza oven. Preheat the pizza oven on high (MAX) with the door closed for 20 minutes.
  2. Meanwhile, in a small pot, combine the brown sugar, soy sauce, mirin, vinegar,
  3. sambal, garlic and shallot. Bring to a boil. Simmer over medium heat for 10 minutes or
  4. until thick and syrupy. Keep the sauce warm.
  5. On a large plate, coat the fish with the oil. Season lightly with salt and pepper.
  6. Reduce the temperature of the pizza oven to medium-high (3). Place the salmon
  7. pieces on the hot cast iron pan, skin-side down. Watch out for splattering. Bake with the
  8. door closed for 3 minutes. Using the removable handle, rotate the pan 180 degrees.
  9. Continue to bake for 3 minutes or until the desired doneness is reached.
  10. Serve the salmon on plates. Drizzle with the teriyaki sauce and sprinkle with the sesame seeds. Serve with white rice and a green vegetable, if desired.
