Rolled Pineapple Turkey Roast

Ingredients

  • 1 boneless turkey breast (2.5 kg/5.5 lb) with skin on, tenderloins removed (2 half breasts)
  • 6 cups (1.5 litres) cold water
  • 2 tablespoons (30 ml) salt
  • 2 tablespoons (30 ml) brown sugar
  • 1/2 teaspoon (2.5 ml) ground cinnamon
  • 2 cups (500 ml) cold pineapple juice
  • 1/2 cup (125 ml) dried cranberries
  • 3/4 cup (180 ml) boiling water
  • 1 onion, chopped
  • 1 clove garlic, finely chopped
  • 2 tablespoons (30 ml) butter
  • 1/4 cup (60 ml) chicken broth
  • 1/2 lb (225 g) Toulouse sausage meat (about 2 sausages) or other mild pork sausage
  • 1/2 cup (125 ml) diced, toasted fresh bread
  • 1/4 cup (60 ml) crushed pistachios
  • 1/2 teaspoon (2.5 ml) ground cinnamon
  • Salt and pepper
  • 1 pineapple
  • 2 tablespoons (30 ml) olive oil
  • Kitchen string
  • 1 4-layer sheet of cheesecloth, moistened
  • Aluminum foil

Instructions

  1. Place the turkey breast in a bucket or stainless steel stockpot.
