Roasted Turkey with Pears and Ginger

Ingredients
- 1 whole turkey with skin, about 11 lb (5 kg) cut into 4 pieces (see note)
- 1 tbsp salt
- 2 tsp rosemary leaves, finely chopped
- 1/2 tsp ground black pepper
- 1 lemon, zest finely grated
- 2 tbsp (30 ml) brandy or lemon juice
- 3 cups (750 ml) chicken broth
- 4 small red onions, quartered
- 4 garlic cloves, halved
- 3 Bosc pears, ripe but firm, cored and cut into large cubes
- 2 pieces fresh ginger, each about 2 inches (5 cm) long, peeled and sliced
- 3 Bosc pears, ripe but firm, cored and cut into small dice
- 1 small red onion, finely chopped
- 1/2 cup (125 ml) red wine
- 3 tbsp (45 ml) lemon juice
- 3 tbsp sugar
- 1 tsp fresh ginger, finely grated
- 3 tbsp flat-leaf parsley, finely chopped
- 1 tsp rosemary leaves, finely chopped
- 1 small red onion, finely chopped
- 3 tbsp butter
- 1/2 cup (125 ml) red wine
- 2 cups (500 ml) chicken broth
- 3 tbsp light toasted flour
Instructions
- Place the turkey pieces, skin-side up, in a large glass dish.
- In a small bowl, combine the salt, rosemary, pepper and lemon zest. Rub the turkey skin and flesh with the salt mixture, making sure the breasts are well seasoned. Using a pastry brush, cover the turkey with the brandy. Cover with plastic wrap and let brine in the refrigerator for 24 hours.
