Roasted Turkey with Apple-Soy Sauce

Ingredients
- 1 whole turkey, about 11 lb (5 kg)
- 2 tbsp salt
- 2 tsp rosemary leaves, finely chopped
- 1/2 tsp ground black pepper
- 2 apples, unpeeled, cored and quartered
- 2 onions, quartered
- 2 cups (500 ml) water
- 1/3 cup (75 ml) maple syrup
- 1/4 cup (60 ml) old-fashioned apple juice
- 1 tsp (5 ml) low-sodium soy sauce
- 2 tsp cornstarch
- 1/2 cup (125 ml) old-fashioned apple juice
- 1 small onion, finely chopped
- 1 tbsp butter
- 2 tbsp (30 ml) apple cider vinegar
- 1 1/2 cups (375 ml) chicken broth
- 1 tbsp (15 ml) low-sodium soy sauce
Instructions
- Remove the bag of giblets from inside the turkey cavity, if there is one. Set the giblets and neck aside. Pat the inside of the turkey cavity with paper towels.
- Place the turkey in a large glass or ceramic baking dish, breast-side up.
- In a small bowl, combine the salt, rosemary and pepper.
- Season the turkey cavity with 1 tbsp of the salt mixture. Sprinkle the remaining salt mixture over the breast and legs. Cover the turkey with plastic wrap and brine in the refrigerator for 2 days.
