Roasted Chicken with Marmalade
Ingredients
- 1/2 cup (125 ml) marmalade
- 1/4 cup (60 ml) butter, softened
- 1/4 cup (60 ml) parsley, chopped
- 2 tablespoons (30 ml) Dijon mustard
- 1 whole chicken, about 4 lbs (1.8 kg)
- Salt and pepper
- 1 tablespoons (15 ml) butter
- 1 tablespoon (15 ml) all-purpose flour
- 1/2 cup (125 ml) orange juice
- 1/2 cup (125 ml) chicken broth
Instructions
- With the rack in the middle position, preheat the oven to 190 °C (375 °F). Line a baking sheet with parchment paper.
