Ramen Noodles with Soft-Boiled Eggs and Peanut Sauce

Ingredients
- 4 eggs
- 2 cups (290 g) frozen shelled edamame
- 3 packages (120 g each) instant ramen noodles (see note)
- 1/4 cup (60 ml) low-sodium soy sauce
- 3 tbsp (45 ml) peanut butter
- 2 tbsp (30 ml) hoisin sauce
- 1 tsp (5 ml) rice vinegar
- 1/2 tsp (2.5 ml) sriracha sauce, or more to taste
- 3 Lebanese cucumbers, cut into thin halfmoons on an angle
- 2 green onions, thinly sliced
- Roasted sesame seeds, to taste
Instructions
- Into a large pot of simmering water, gently lower the eggs using a slotted spoon. Cook for 6 minutes. Remove the eggs from the pot with a slotted spoon and let cool in a bowl of cold water for 5 minutes. Do not discard the water in the pot. Peel the eggs under cold running water and set aside on a plate. Compost the egg shells.
- In the same pot of salted boiling water, cook the edamame and noodles for 2 to 3 minutes or until the noodles are al dente. Stir to separate the noodles. Set aside 1 cup (250 ml) of the cooking water. Drain the noodles and edamame. Set aside.
- Meanwhile, in a large bowl, whisk together the soy sauce, peanut butter, hoisin, vinegar and sriracha. Season with pepper.
- Add the noodles, edamame and ½ cup (125 ml) of reserved cooking water to the bowl of sauce. Mix well with tongs. Add more cooking water to thin out the sauce as needed. Adjust the seasoning.
- Divide the noodle mixture among four bowls. Top with the cucumbers and green onions. Add an egg cut in half to each bowl. Sprinkle with sesame seeds.
