Raita (Cucumber and Yogurt Salad)
Ingredients
- 3 English cucumbers, peeled, seeded and diced
- 1 cup (250 ml) plain yogurt (4% MF or higher)
- 1/4 cup (60 ml) flat-leaf parsley, chopped
- 2 tablespoons (30 ml) lime juice
- Salt and pepper
Instructions
- In a bowl, combine all the ingredients. Season with salt and pepper. Refrigerate for 15 minutes.
