Quinoa and Cheddar Cheese Stuffed Squash

Ingredients

  • 2 small acorn squash
  • 2 tbsp (30 ml) olive oil
  • 2 tsp (10 ml) honey
  • 1/2 cup (125 ml) quinoa, rinsed and drained
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 tbsp (30 ml) olive oil
  • 1 tsp (5 ml) harissa paste
  • 1 roasted red bell pepper, peeled, seeded and diced
  • 1/2 cup (125 ml) roasted peanuts, chopped
  • 1/4 cup (60 ml) raisins
  • 3/4 cup (180 ml) grated cheddar cheese
  • 2 tbsp (30 ml) cilantro, chopped (optional)

Instructions

  1. With the rack in the middle position, preheat the oven to 400 °F (200 °C). Line a baking sheet with parchment paper.
  2. Cut the squash in half. With a spoon, remove the seeds. Brush the flesh with the oil. Season with salt and pepper. Place the squash on the baking sheet, cut side down.
  3. Bake for 40 to 45 minutes or until the squash is tender. Right out of the oven, brush the inside of the squash with the honey.
