Quick Marinated Chicken with Roasted Vegetables
Ingredients
- 1/3 cup (75 ml) ketchup
- 2 tbsp (30 ml) Dijon mustard
- 1 tbsp (15 ml) honey
- 1 tbsp (15 ml) olive oil
- 2 tsp sweet paprika
- 1 tsp garlic powder
- 1/2 tsp ground allspice
- 1/4 tsp cayenne pepper
- 1/2 cup (125 ml) plain yogurt
- 1 1/2 lb (675 g) boneless, skinless chicken thighs, each cut into 3 pieces
- 3 ears corn, each cut into 3 pieces
- 2 zucchini, cut into rounds ½ inch (1 cm) thick
- 1 red onion, cut into large dice
- 1 red bell pepper, seeded and cut into large dice
- 2 tbsp (30 ml) olive oil
- 1/4 cup (10 g) cilantro leaves, coarsely chopped
Instructions
- In a bowl, whisk together the ketchup, mustard, honey, oil and spices. Remove 2 tbsp (30 ml) of the marinade and place in a small bowl with the yogurt. Season the yogurt sauce with salt and pepper. Mix well. Set the yogurt sauce aside until ready to serve.
