Potato-Wrapped Cod with Cucumber Salad
Ingredients
- ¼ cup (60 ml) mayonnaise
- 1 tbsp (15 ml) apple cider or malt vinegar
- 4 Lebanese cucumbers, sliced into thin rounds
- 2 celery stalks, thinly sliced
- 1 cup (30 g) fresh spinach, thinly sliced
- 2 tbsp fresh basil, finely chopped
- Canola oil, for frying
- 4 large Russet potatoes, peeled
- 4 cod pieces, about 5 oz (140 g) each, without skin, (see note)
Instructions
- In a bowl, whisk together the mayonnaise and vinegar. Add the remaining ingredients. Season with salt and pepper and mix well. Set aside.
